These Seekh kebabs are wonderfully made with grated sweet corn and mashed potatoes. It is one of the delicious Indian recipes that can be quickly prepared in less time. The Corn Seekh Kebab has high nutritional values and can be best used as the starters. You can also give it to your kids as a snack or in lunch.
1/2 cup boiled and mashed potatoes
1/4 cup grated sweet corn
2 tbsp chopped spring onions whites
2 tsp chopped green chilies
1 tbsp cornflour
1/2 tsp garam masala
2 tsp ghee
2 tsp melted butter
salt to taste
1 teaspoon chili powder for brushing
Pudina chutney and lemon wedges for serving
Take a bowl and mix all the ingredients, except the ghee.
Now, heat the ghee and add the prepared mixture. Cook it for 2 to 3 minutes.
Allow the mixture to cool and divide it into 4 equal portions.
Take a thick seekh (metal skewer) and press each portion of the mixture on it to make a 100 mm long kebab.
Brush each kebab with ½ teaspoon of butter.
Cook the kebabs over a charcoal or electric barbeque till they get golden brown in color.
Cut each kebab into 3 pieces and serve hot with pudina chutney and lemon wedges.
